Something that they offer at Ruby Tuesday's as a low-card sub for pots is creamed cauliflower... it's just cauliflower steamed, purreed with a little bit of butter and mustard (like the actually mustard seed, but just a pinch). It's really good, tastes just like mashed potatoes.
